My version of Chicken Steamed Rice is a very easy and fast yet delicious dish. And even better, you only need less than 5 minutes to cook !! It is very suitable for a quick-lunch or dinner or when you are not in the mood of cooking, you can always prepare Chicken Steamed rice in no time for your family.
Ingredients (for 2 persons)
2 chicken breast fillet, sliced thinly ( I used Ayam Kampung which is quite small in size, that’s why I need 2 breasts, but if you buy your chicken breasts at the supermarket, I think 1 would be enough)
10 small shallots (if you can’t find small shallots in your country, you can use the big one and cut into chunks)
2 shiitake mushroom, soaked and sliced thinly (you might need around 30 min to soak in warm water, so prepare this in advance)
1 hard-boiled egg (divided into 2 later on)
Let’s cook !!!
- Prepare your wok, pour in generous amount of oil (I used canola oil) and turn the heat up to high.
- Add in your shallots and sauté until the color change
- Add in you sliced chicken, sauté again until well cooked, and then you add your shiitake mushroom
- Add in 1 tbsp oyster sauce, 1 tbsp Kecap Raja Rasa, 2 tsp of salt, 1 tsp of sugar and half cup hot water. sauté and let it simmer in medium low heat for 2-3 minutes while you prepare the bowl for rice.
Let’s prepare the presentation
Drizzle a small amount of sesame oil in small bowl and put in half boiled egg.
Add in the chicken mixture to the bowl.
Add your rice, press it to set the shape and turn in over onto a plate
And voilà … !!!! it’s ready to be served. Serve warm with chunk of chili pepper if you like it hot.
